Geddes, N.Y. — The New York State Fair’s best-kept secret will no longer be a secret this morning.
Veteran sculptors Jim Victor and Marie Pelton have barely left the refrigerated display case inside the Dairy Building for the past 10 days. They’ve been working feverishly in the cooler to take 800 pounds of butter and transform it into a work of art. The 56th annual American Dairy Association North East butter sculpture will be unveiled at 9:30 a.m. today. The Fair opens 23½ hours later, at 9 a.m. Wednesday and runs through Labor Day.

We’ll be sure to give you plenty of warning to not proceed unless you actually want to see the sculpture before heading to the Fair.
The butter used for the sculpture comes from Batavia. After being gawked at during the Fair’s 13-day run, the butter will return to Western New York where it will be recycled into renewable energy at Noblehurst Farms in Pavilion.
